We are group of people who are passionate about sushi.  One of our favourite technique to make sushi is searing. We do crazy things with sushi.

Project:fish focuses on providing unique style sushi with expedite service.

Our oshi (pressed) sushi is pressed in a box so that it stays in shape after searing with special sauces. It should be firm when picked up to eat.

Flame sear sushi is torched with binchotan charcoal. Searing enhances natural flavour of fish and give unique smokey aroma Try oshi sushi AS-IS.

Our experienced chefs season and sear it with right amount of sauces. Also select garnishes to contrast flavour of sauces for each type of oshi sushi.
